These bubbles are slightly Oxidized with age, with aromas of apple cider, pear cider, yellow plum, and saline notes on the nose. The mid-palate has tiny persistent bubbles and medium-firm mousse. The flavors on the palate are tangerine, kiwi, sweet tart, and umani wrapped around orchard fruits. There is ample vibrant energy and texture that will carry the entirety of a meal from start to finish. It is a good idea to have two on hand for enjoyment. Pair with a lengthy progressive meal.
