Doyard 'Revolution' Blanc de Blancs Grand Cru Non-Dose

Primarily from Avize. Also small parcels in Le Mesnil, Cramant and Oger. 40 year old vines on average. Blocked malo. Aged in older barrels. Aged 84 months on the lees. Zero dosage. The viticultural philosophy employed by the domaine is a self-described "non-dogmatic" approach to biodynamic farming with absolutely no herbicides or pesticides used. In the cellar, state of the art double banked Coquard PAI presses are employed and every parcel is vinified separately. All of the wines undergo long lees aging - a minimum of 48 months on many of the cuvées -lending them that have become the envy of the Côtes des Blancs. Every single decision made in the vineyard and cellar are geared toward making the most expressive, terroir focused Champagne possible.
